Remove assists in a sensible order as your control improves.

EA recommends Medium traction control and ABS on as a strong beginner baseline. Driving assists should be reduced progressively rather than disabled all at once.
How it works
A suggested progression is to remove Braking Assist and Cornering Assist first, then reduce the Dynamic Racing Line to Corners Only and later off, and finally move traction control from Full to Medium and then Off if desired.
Practical tips and limits
Do not remove an assist simply because faster players do. Keep the settings that let you drive consistently and reduce them only when you can identify the benefit.
